So far the “cooking something new for dinner” revelation is holding up pretty well. Joey and I have made a lot of new things and there hasn't been anything we made that we hated!! Ya!!! Most of the dishes have been made by Joey just because dinner would be ready when I got home from work (I know…I’m way spoiled… but I do his laundry…even trade off). However, the one night when he worked later than me I had it ready for when he got home.
Here are a few dishes we have made:
-Meatloaf – this was delicious! I hadn’t had meatloaf since my mom made it eons ago. We made extra to freeze it so we could have something quick when we needed it.
-Pita Pizzas- We made two versions of this. One was chicken guacamole and the other was BBQ chicken. Really easy, really simple, and really, really good!!!
-Meatballs- These meatballs were homemade and put into a penne pasta bake- We had a recipe for the meatballs, but the actual pasta bake Joey pulled out of his ass. It was quite delicious though.
Pork Chops with an onion glaze – I made this dish and it actually turned out great (usually the things I make never turn out)
Crab stuffed chicken- YUM, YUM, YUM. We used imitation crab..cuz Joey won’t eat the real stuff….but this is my favorite new dish so far.
Chicken strips with a tortilla breading - not really a dinner but made a good snack!!
Lumpia- This is the Filipino version of an egg roll that is mainly filled with meat. We asked Arnold to ask his mom to make some for us cuz it is just that good. But Joey said that if he had the recipe and the lumpia wrap that he could make it. So yesterday, Arnold and Jamie show up with lumpia wrappers and told Joey to pretty much go for it. He didn’t follow the exact recipe (cuz we didn’t have it all and were too lazy to go to the store) but he mixed ground beef, carrots onions, garlic, chile sauce and soy sauce together. We (well…just me..the boys had problems not breaking the thin wrapping) wrapped it up in an egg roll form and then we deep fried it. And our first attempt turned out really well. I was happy that they were actually good. I just have to figure out to make them smaller like the Filipino’s do. I guess practice makes perfect.
We have many more recipes to try. I printed out a ton of them from various websites online. Tonight I will be making homemade pizza. I got the dough recipe from my sister. It was the recipe my mom always made. I am sure it will turn out great. We are also going to use the extra Lumpia wrappers and make this deep fried banana thingy. I’m sure it will be good. However, I am going to need to run some miles on the tredmill when I get home from work to make up for deep fried foods I will have ate and/or will be eating. You have to try everything at least once!!!!

I am proud of you! The one thing I've had time to make in the last couple weeks was a spaghetti thing last night. But this is finals week so I should be good to go over the summer! Whoo hoo! And congrats on your budding cooking skills!
